These cookies can be very crumbly but are quite delicious.
1 cup blanched almond flour (Honeyville Grains)
1/2 teaspoon salt
1/4 teaspoon baking soda
1/2 cup nut butter (almond butter or a variation)
1 large egg
2 Tablespoons coconut oil
1 teaspoon vanilla extract
1/2 teaspoon cane sugar
Preheat oven to 350.
In a medium bowl combine add all of the ingredients except the cane sugar.
Use a fork to mix all the ingredients together until combined.
Place a silpat liner on a baking sheet or spray a baking sheet with oil, so the cookies won’t stick.
Using a small cookie scoop, place balls of dough on the baking sheet, 1” apart. The recipe will make 10-12 cookies.
Slightly flatten the dough with your fingers. Gently sprinkle a tiny bit of the cane sugar on top of each cookie.
Bake for 10-12 minutes. Allow to cool and remove from the pan.
Store in an airtight container for up to 3 days.
